    30 years old Pinot Noir


    Very early harvest at the end of August 2019 to maintain natural freshness and lightness

    Very gentle whole grape pressing (champagne program)

    Spontaneous fermentation, no oenological aid

    12 months in a used 600 litre barrel on lees with a weekly bâtonnage for 6 months,

    spontaneous malolactic fermentation.

    Bottled in August 2020 without filtration, where the second fermentation starts.

    On the lees in the bottle for 15 months where still wine develops its bubbles!

    Riddled by hand.
