Pinot Gris

  • Tasting notes:

    Breeze of white flowers, slight almond note, herblike, well balanced, creamy-yeasty, a touch of oak, invigorating acidity and a long finish with a pleasant salty minerality.


    30 years old Pinot Gris on very steep slope


    Early harvest to attain freshness and lightness

    Very gentle whole grape pressing (champagne programme)

    Spontaneous natural fermentation

    No oenological products added

    1/4 in new barrels, 3/4 in 350l used barrels on its fine lees

    Weekly bâtonnage for 3 months

    Spontaneous malolactic fermentation

    Filtration just before bottling with <20mg/l free sulphur
