Tasting:
Purely made from 100% Cabernet Jura
Very bright red color, a very pleasant lightness, just over 9% alcohol by volume! Gentle fruity notes of light and red forest berries, raspberries.
Vineyard:
Cabernet Jura vines were almost never treated against powdery mildew.
Food recommendations:
As the name suggests, APEROOOO, serve chilled at a maximum of 12 °C
Vinification:
early harvest to preserve natural freshness and lightness,
very short mashing time in the press,
then pressed using the classic white wine program
no oenological aids,
spontaneous fermentation and spontaneous biological acid reduction (malolactic fermentation),
2 months in a stainless steel tank on the fine lees,
Unfiltered, bottled by hand
bottled with <20mg/l free sulfur
